Kanelbullar or kanelbulle are Swedish Cinnamon Buns traditionally made with flour, sugar, cinnamon, and butter. If you’ve ever made babka or our braided apple pie bread before, the method is pretty similar. Kanelbullar is pronounced CAN-eel-BULL-are and they were invented around , long before Cinnabon took over every mall in America.

Spread the room-temperature butter on top. Mix sugar and cinnamon. Sprinkle it over the dough. Roll the dough the long way and cut it into roughly 25 slices. Place them with the cut edge upward in paper molds. Place on a baking sheet and let rise under a towel for about 60 minutes or until the buns have doubled in size.

Stir in 3/4 cup whole milk, 1/3 cup granulated sugar, 2 large eggs, 1/4 teaspoon kosher salt. Add 1 stick unsalted butter and 4 1/2 cups all-purpose flour. Stir together with a sturdy rubber spatula, then knead the dough in the bowl until smooth, 5 to 7 minutes. Cover the bowl with a kitchen towel. Let rise at room temperature for 30 to 45 minutes.

In a separate large mixing bowl, briefly whisk together the flour, sugar, yeast, ground cardamom and salt until combined. Add the warm milk mixture and stir until the dough begins to form. Turn the dough out onto a floured surface and knead for minutes, or until the dough is smooth and soft. First dough rise.
